    1 cup warm water
    2 ¼ tsp. active dry yeast (1 envelope)
    ¼ tsp. honey
    2 ½ cups flour, divided
    1 small onion, thinly sliced

    MIX warm water, yeast, and honey in a large bowl. Let sit for 5 mins. or until mixture begins to foam. Add 2 Tbsp. Organic Extra Virgin Olive Oil and 1 cup of the flour. Stir until flour is moistened then allow to sit for another 5 mins.
    STIR in the rest of the flour and Himalayan Fine Mineral Salt. Knead the dough on a floured board until smooth.
    OIL a large bowl and place the dough inside. Cover gently with a warm damp towel and allow to rise for an hour.
    IN a medium frying pan, sautè onions over medium heat for 10 mins., then add the remaining Organic Extra Virgin Olive Oil, Garlic - Minced, Italian Herb Spice Blend, and Black Pepper - Medium Ground. Turn heat down to low, and continue to cook for 5 mins., stirring often.
    PREHEAT oven to 450ºF. Grease a 9x13 baking sheet and press the dough firmly down into the pan. Spread the spice mixture over top. Allow to rise for 20 mins. then bake 15-20 mins. or until browned.
    AFTER removing from the oven, sprinkle focaccia bread with Sweet Onion Sugar if extra onion flavor is desired.
    *For a faster version, substitute a refrigerated pizza dough for homemade dough and skip to the step beginning with "IN a medium frying pan."
