Mexican oregano is as essential to chili powder as Greek oregano is to pizza.  Considered stronger, more woodsy, and earthy in its aroma and flavor in comparison to its Mediterranean counterpart, Mexican oregano is much more suited to the flavors of Mexican and Tex-Mex cuisine.  It tastes good with chile con carne, moles, beans, burritos, enchiladas, fish, pork, salsas, soups, stews, tacos and anything tomato heavy in these cuisines.  It partners well with cumin, chili powder, dried Mexican chiles, garlic and black pepper and is the herb you want to use for strong meaty flavors or dishes that are intensely spicy.

Fun Fact:  Native to Central and South America, Mexican oregano comes from the Lippia Graveolens plant and is a member of the same family as lemon verbena.
